Vadodara: In our culture, sweets are made according to festivals. Cakes are made especially during Christmas time. During this time people like to eat plum cake. Plum gives warmth to the body during cold weather, which provides relief from cold. Bharatiben Vania from Vadodara city, who runs a cooking and baking class named “Lewis Cuisine”, has shown how to make plum cake with home ingredients.
Ingredients of Plum Cake
1/4 cup butter
1/4 cup brown sugar
1 tbsp honey
1/4 cup milkmaid
1/2 cup flour
1 tablespoon baking powder
1/2 tsp baking soda
Spices (cinnamon, cardamom, nutmeg, ginger powder) – as per taste (about 1/4 tsp)
1/4 cup mixed fruit juice and dry fruits (like dates, figs, raisins, black grapes, strawberries, plums, dried kiwi, mango, pineapple, walnuts)
How to make Plum Cake
1. Mixing Ingredients: Mix butter, brown sugar, honey and milkmaid well in a bowl.
In another bowl, sift and mix flour, baking powder, baking soda and spices. Straining makes the cake soft. In the third bowl, take 1/4 cup mixed fruit juice and add dry fruits to it.
2. Mix dry fruits and batter: Mix juice and dry fruits with honey and brown sugar.
Now mix the flour slowly. The batter should be slightly thick.
Add 3 tablespoons of tutti-frutti and 2-3 drops of rum essence or vanilla essence (optional).
Grate orange and lemon peels and add them.
3. Baking Method: Preheat the oven at 180 degrees.
If you don’t have an oven, take a thick-bottomed cooker or non-stick pan. Remove the ring and whistle of the cooker.
Place a steel plate or bowl inside it. Close the lid and preheat on gas for 6-7 minutes.
Cook the cake on low flame, it may take 50-55 minutes.

4. Prepare the cake: Pour the prepared batter into any vessel. Garnish with cherries, almonds, cashews and tutti-frutti.
Bake in the oven at 180 degrees for 45 minutes.
Cake with festive touch is ready!
Plum cake can be cooled and stored in the refrigerator for up to a month.
